Fiesta Friday! Honey chipotle pork tacos recipe

HONEY CHIPOTLE PORK TACOS
Ingredients
  • 1 pound boneless pork chops cut into strips
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon soy sauce
  • ½ t ground chipotle pepper
  • 8 small corn tortillas, warmed
  • 1 cup shredded lettuce
  • 1 cup pico de gallo
  • Sour cream to taste
Directions
Combine honey, oil, lemon, soy and pepper. Whisk. Add pork. Set aside for 15 minutes. Preheat skillet over high heat. Cook meat 1-2 minutes on each side. Set aside. Add lettuce and pico to tortillas top with pork. Top with sour cream as desired.

Chef's Tips
These tacos would also be great topped with homemade slaw, shredded cabbage and carrots, sliced avocado or queso fresco.
