Fiesta Friday! Avocado orange salsa recipe

When most people hear the word "salsa", they think of tomatoes, peppers and onions combined with a variety of spices used for dipping tortilla chips. The following recipe goes outside the box and includes the fresh fruity flavor of oranges with the health benefits of fresh avocado.

  • 3 avocados, peeled, pitted and diced
  • 1/4 cup red onion, diced
  • 1 small jalapeno, seeded and diced
  • 3 tablespoons fresh squeezed orange juice
  • splash olive oil
  • dash garlic salt
  • 2 oranges, peeled, segmented and cut into small pieces (remove seeds if needed)
  • 2-3 tablespoons fresh cilantro, chopped
In a medium size bowl, combine all ingredients except the orange segments and cilantro. Stir until combined. Gently fold in the remaining ingredients. Cover and refrigerate for at least 2 hours to allow flavors to blend before serving.
